It seems that I can only see the peers for one torrent at a time (click on the torrent in the list, and then the peers tab). Is it possible to simultaneously see the peers for all torrents in a list?

No. Not sure that any torrent clients do that by default, most people wouldn’t need that sort of feature.
But it might be possible to write a script to do that e.g. create a script querying qBittorrent to examine each active torrent & output each peer found into one grouped list.
Wouldn’t ctrl+left mouse button on torrents work? Just guessing, comment for reach.
