The Kenji one (https://www.seriouseats.com/ultimate-beef-stroganof-recipe) is amazing. I just sub creme fresh for sour cream.
Crème fraîche IS a type of sour cream (basically the fancier European version). It’s just slightly sweeter and has a higher fat content than the regular stuff.
But with as many upgrades as this recipe makes over the classic, it’s almost surprising he didn’t substitute this one as well.
That’s a good point. There are a lot of substitutions.
I didn’t actually know they were the same. I just prefer the less sour-ness of Crème fraîche.
Side note: it makes for a really good onion dip with onion soup mix.
Just slap some mascarpone and a couple of tomatoes on there and it will look and taste so much better.
Literally just needs sour cream and maybe some mushrooms (cooked into sauce, obviously) and it would be passable Stroganoff.
at least there is evidence of onions, so they could’ve made onion sauce.

Literally could have just dumped a tub of sour cream and some spices into the pan with the meat and onion juices and made an acceptable sauce in less than five minutes. This screams either laziness or empty fridge to me.
oh, I agree, those pasta dishes are quick and easy, keeping pesto, tomato sauce or even frozen cheeze as rainyday reserve can go long way for quick and dirty recipe.

The meat actually looks fairly decent and the pasta is not overcooked, so it doesn’t appear to be a skills issue. Maybe they ran out of cream?
