Interesting. I have an earl grey infused with black currant and it sounds like this could draw out some of those fruitier notes. What do you use to measure the temperature of the water?

Saw a video of an Italian guy making carbonara and copied his recipe. It was delish. Main takeaway was putting some water in the pan with the guoncale and some water in the egg mixture.
